Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced onion and minced garlic; sauté until the onion is translucent.
  3. Increase the heat to medium-high and add ground beef. Cook until browned, breaking it apart with a spoon.
  4. Stir in the diced red bell pepper and zucchini; cook for about 5 minutes until slightly softened.
  5. Add the cherry tomatoes, spinach, smoked paprika, Italian seasoning, salt, and pepper. Cook for an additional 4-5 minutes, stirring occasionally until the spinach wilts and the tomatoes soften.
  6. Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh parsley before serving.
