Ingredients:

  • 1 cup hard red wheat, rinsed and soaked for 4 hours
  • 1 lb ground beef
  • 4 cups beef bone broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 medium potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until translucent.
  2. Add ground beef to the pot, breaking it up with a spoon. Cook until browned.
  3. Stir in the diced carrots and potatoes, cooking for an additional 5 minutes.
  4. Add the soaked hard red wheat, beef bone broth, dried thyme, smoked paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat to low and let simmer for 45 minutes, or until the wheat and vegetables are tender, stirring occasionally.
  6. Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
