Ingredients:

  • 4 cups beef bone broth
  • 8 oz shrimp, peeled and deveined
  • 1 cup quinoa, rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, carrot, and celery; sauté for 5-7 minutes until softened.
  2. Pour in the beef bone broth and bring to a simmer.
  3. Add the quinoa and thyme to the pot. Cook for about 15 minutes, or until the quinoa is fluffy and cooked through.
  4. Add the shrimp to the pot and cook for an additional 3-5 minutes, or until the shrimp are pink and opaque.
