Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, peeled and diced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
  2. Remove the beef from the pot and set aside. In the same pot, add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
  3. Stir in the carrots and potatoes, cooking for another 5 minutes.
  4. Return the beef to the pot, then add the beef broth, red wine, tomato paste, thyme, rosemary, smoked paprika, and bay leaf. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, until the beef is tender.
  6. Season with salt and pepper to taste. Remove the bay leaf before serving.
  7. Garnish with fresh parsley and serve hot.
