Ingredients:

  • 1 lb ground beef
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cups tomatoes, diced (or canned)
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
