Ingredients:

  • 6 slices of day-old bread, cubed
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh herbs (parsley or chives) for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add diced onions and bell peppers, and sauté until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant. Remove from heat.
  3. In a large mixing bowl, whisk together the eggs, milk, oregano, salt, and black pepper until well combined.
  4. Add the sautéed vegetables and cubed bread into the egg mixture, stirring gently to combine. Fold in the shredded cheese.
  5. Pour the mixture into a greased baking dish and spread evenly. Let it sit for about 10 minutes to allow the bread to soak up the egg mixture.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the eggs are set.
