Ingredients:

  • 1 slice of bacon
  • 1 medium potato, shredded (for hashbrowns)
  • 2 eggs
  • 1/4 cup shredded cheese (cheddar or your choice)
  • 1/2 avocado, sliced
  • 1 bagel, halved
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: hot sauce for serving

Instructions:

  1. In a skillet over medium heat, cook the bacon until crispy. Remove and set aside on paper towels to drain.
  2. In the same skillet, add olive oil. Once hot, add the shredded potatoes and season with salt and pepper. Cook until golden brown and crispy, about 5-7 minutes, flipping halfway through.
  3. While the hashbrowns are cooking, whisk the eggs in a bowl and season with salt and pepper. Pour the eggs into the skillet and scramble until cooked through. Stir in the shredded cheese until melted.
  4. Toast the bagel halves until golden brown.
  5. Assemble the bagel by layering the cheesy scrambled eggs, crispy bacon, hashbrowns, and avocado slices on one half of the bagel. Top with the other half.
  6. Serve immediately, with optional hot sauce for an extra kick.
