Ingredients:

  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • 2 large flour tortillas
