Ingredients:

  • 1 cup cassava flour
  • 1/2 cup potato flour
  • 1/4 cup potato starch
  • 2 tablespoons psyllium husk powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 cup water (adjust as needed)

Instructions:

  1. In a large mixing bowl, combine cassava flour, potato flour, potato starch, psyllium husk powder, sea salt, and baking soda.
  2. In a separate bowl, whisk together the eggs, honey, olive oil, and apple cider vinegar until well blended.
  3. Pour the wet ingredients into the dry ingredients and mix until combined. Gradually add water to achieve a thick but pourable batter.
  4. Heat a non-stick skillet over medium heat and add a little olive oil.
  5. Spoon about 2 tablespoons of the batter onto the skillet for each fritter. Flatten slightly with the back of the spoon.
  6. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove from the skillet and allow to drain on paper towels. Serve warm.
