Ingredients:

  • 4 cups chicken broth
  • 2 cups celery, chopped
  • 2 cups carrots, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat a splash of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the chopped celery, sliced carrots, dried thyme, dried oregano, and bay leaf. Season with salt and pepper.
  5. Simmer the soup for about 20-25 minutes, or until the vegetables are tender.
  6. Remove the bay leaf, stir in the lemon juice, and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
