Ingredients:

  • 1 cup crushed savory crackers (like Ritz or similar)
  • 1/4 cup melted butter
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 large eggs
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the crushed savory crackers and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until caramelized, about 10-15 minutes. Set aside to cool slightly.
  4. In another mixing bowl, beat the cream cheese until smooth. Add the sour cream, cheddar cheese, and Parmesan cheese, mixing until well combined.
  5. Add the eggs one by one, mixing well after each addition. Stir in the garlic powder, thyme, and the cooled caramelized onions. Season with salt and pepper to taste.
  6. Pour the cheese mixture over the prepared crust in the springform pan, smoothing the top with a spatula.
  7. Bake for 35-40 minutes, or until the center is set and the edges are lightly golden.
  8. Allow the cheesecake to cool at room temperature before refrigerating for at least 2 hours before serving.
  9. Slice and serve chilled or at room temperature, garnished with fresh herbs if desired.
