Ingredients:

  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 3-4 tablespoons ice water
  • 2 medium onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • 1 cup grated cheese (such as Gruyère or sharp cheddar)
  • Salt and pepper to taste
  • 1 egg (for egg wash, optional)

Instructions:

  1. In a mixing bowl, combine flour and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. While the dough chills, heat olive oil in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized, about 15-20 minutes. Season with thyme, salt, and pepper.
  4. Preheat the oven to 400°F (200°C).
  5. On a floured surface, roll out the dough into a circle about 12 inches in diameter. Transfer to a baking sheet lined with parchment paper.
  6. Spread the caramelized onions over the dough, leaving a 2-inch border. Sprinkle grated cheese on top.
  7. Fold the edges of the dough over the filling, pleating it as necessary. Brush the exposed edges with egg wash if desired.
  8. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the cheese is bubbly.
