Ingredients:

  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup diced tomatoes
  • 1 cup crushed cereal (like cornflakes or bran flakes)
  • 2 medium potatoes, peeled and diced
  • 1/4 cup apple cider vinegar
  • 1/2 cup sour cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, steamed broccoli, diced tomatoes, sour cream, garlic powder, onion powder, salt, and pepper. Mix well until evenly combined.
  3. In a separate pot, boil the diced potatoes until tender, about 10-15 minutes. Drain and set aside.
  4. Fold the cooked potatoes into the chicken and broccoli mixture.
  5. Transfer the mixture into a greased baking dish and spread evenly.
  6. In a small bowl, mix the crushed cereal with olive oil and sprinkle it over the top of the casserole.
  7. Sprinkle the shredded cheese over the cereal layer.

  9. While the casserole is baking, prepare the apple cider dressing by mixing the apple cider vinegar with a pinch of salt and pepper.
