Ingredients:

  • 2 cups of chicken breast, boneless and skinless
  • 1 cup of jasmine rice
  • 2 ripe mangoes, peeled and diced
  • 1 tablespoon of honey
  • 1 lime, juiced
  • 1 teaspoon of ginger, grated
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro, for garnish

Instructions:

  1. In a pot, bring water to a boil, add a pinch of salt, and then add the chicken breasts. Boil for about 15-20 minutes until cooked through. Remove and let cool before shredding.
  2. In the same pot, add jasmine rice and cook according to package instructions until fluffy.
  3. In a small saucepan, combine diced mangoes, honey, lime juice, and grated ginger. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the mango is soft and the mixture thickens slightly.
  4. To assemble, place a serving of rice in a bowl, top with shredded chicken, and drizzle with the mango compote. Garnish with fresh cilantro and serve warm.
