Ingredients:

  • 2 cups diced cooked chicken
  • 1 cup diced mushrooms
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup grated cheddar cheese
  • 1 package of ready-made pastry dough (homemade or store-bought)
  • 1 egg (for egg wash)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until translucent.
  3. Add the diced mushrooms to the skillet and cook until softened. Stir in the diced chicken, thyme, rosemary, salt, and pepper. Cook for an additional 2-3 minutes.
  4. Remove the skillet from heat and let the mixture cool slightly. Stir in the grated cheddar cheese until well combined.
  5. Roll out the pastry dough on a floured surface and cut into circles (about 6 inches in diameter).
  6. Place a generous spoonful of the chicken and mushroom mixture in the center of each pastry circle.
  7. Fold the pastry over to create a half-moon shape, sealing the edges by pressing with a fork.
  8. Brush the tops with beaten egg to give a golden color when baked.
  9. Place the pasties on a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown.
  10. Remove from the oven and let cool slightly before serving.
