  • 4 cups frozen mixed vegetables (carrots, peas, corn, and green beans)
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon honey or maple syrup (optional for sweetness)
  • Salt and pepper to taste
  • Cooked rice or noodles for serving (optional)

Instructions:

  1. In a large skillet or wok, heat the olive oil over medium-high heat.
  2. Add the frozen chicken breasts directly to the skillet and cook for about 10-12 minutes, stirring occasionally, until fully cooked and browned on all sides.
  3. While the chicken is cooking, prepare the garlic-soy sauce by mixing soy sauce, minced garlic, minced ginger, and honey (if using) in a small bowl.
  4. Once the chicken is cooked, add the frozen mixed vegetables to the skillet and stir-fry for an additional 5-7 minutes until the vegetables are heated through.
  5. Pour the garlic-soy sauce over the chicken and vegetables, stirring to coat evenly. Cook for another 2-3 minutes to allow the flavors to meld.
  6. Season with salt and pepper to taste. Serve immediately over cooked rice or noodles if desired.
