Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 cups green cabbage, shredded
  • 1 can (15 oz) white beans, rinsed and drained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt, pepper, and smoked paprika.
  2. Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
  4. Stir in the shredded cabbage and cook until slightly wilted, about 5 minutes.
  5. Add the white beans, dried thyme, and lemon juice to the skillet. Stir well and cook for another 2-3 minutes until heated through.
  6. Return the chicken to the skillet, nestling it among the cabbage and beans. Cook for an additional 2 minutes to meld the flavors.
  7. Garnish with fresh parsley before serving.
