Ingredients:

  • 1 lb chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 2 cups green cabbage, chopped
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  2. Add the sliced carrots and cook for an additional 3-4 minutes until slightly softened.
  3. Stir in the chicken thighs and brown on both sides for about 5 minutes.
  4. Pour in the chicken broth and add the chopped cabbage, white beans, thyme, paprika, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the chicken is cooked through and tender.
  6. Remove the chicken thighs, shred them with two forks, and return the shredded chicken to the pot.
  7. Adjust seasoning as needed and serve hot, garnished with fresh parsley.
