Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup water
  • 1 pound ground chicken
  • 2 green onions, finely chopped
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon cornstarch (optional, for binding)
  • Dipping sauce (soy sauce mixed with rice vinegar and chili oil)

Instructions:

  1. In a mixing bowl, combine the flour and salt. Gradually add water, mixing until a dough forms. Knead for about 5 minutes until smooth. Cover and let rest for 30 minutes.
  2. In a separate bowl, mix the ground chicken, green onions, ginger, garlic, soy sauce, sesame oil, black pepper, cilantro, and cornstarch (if using) until well combined.
  3. Roll out the dough on a floured surface to about 1/8 inch thickness. Cut into 3-inch circles.
  4. Place a teaspoon of the chicken mixture in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal tightly.
  5. Steam the dumplings in a steamer basket lined with parchment paper for about 15-20 minutes, or until the chicken is cooked through.
  6. Serve hot with a dipping sauce made from soy sauce, rice vinegar, and a dash of chili oil.
