Ingredients:

  • 1 pound ground chicken
  • 8 ounces chicken livers, cleaned and chopped
  • 1 cup breadcrumbs
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup green beans, trimmed
  • 1 can (15 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 tablespoon fresh basil, chopped (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground chicken, chopped chicken livers, breadcrumbs, onion, garlic, egg, Worcestershire sauce, thyme, salt, and pepper. Mix until well combined.
  3. Transfer the meat mixture into a loaf pan, shaping it into a loaf. Bake in the preheated oven for 45-50 minutes or until cooked through.
  4. While the meatloaf is baking, heat olive oil in a skillet over medium heat. Add the green beans and sauté for about 5 minutes until bright green and tender-crisp. Season with salt and pepper.
  5. In a small saucepan, combine the crushed tomatoes and oregano. Simmer over low heat for about 10 minutes to let the flavors meld.
  6. Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve with sautéed green beans and topped with warm tomato sauce. Garnish with fresh basil.
