Ingredients:

  • 1 sheet of puff pastry
  • 2 cups cooked chicken, shredded
  • 1 cup egg noodles, cooked
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and cut into circles to fit into a muffin tin.
  3. Press the pastry circles into the muffin tin, creating small tart shells.
  4. In a skillet, heat a little oil over medium heat, then add the onion and garlic. Sauté until translucent.
  5. Add the mixed vegetables and cook for another 2-3 minutes.
  6. Stir in the shredded chicken, cooked egg noodles, chicken broth, heavy cream, thyme, salt, and pepper. Cook until heated through and slightly thickened.
  7. Spoon the chicken mixture into each pastry shell.
  8. Brush the edges of the pastry with the beaten egg.
  9. Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown.
  10. Allow to cool slightly before serving.
