Ingredients:

  • 1 lb chicken sausage, sliced
  • 1 cup lentils, rinsed
  • 2 cups butternut squash, diced
  • 1 cup mushrooms, sliced
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 1 cup shredded cheese (such as cheddar or gruyère)

Instructions:

  1. In a large pot, heat a little oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened.
  2. Add the sliced chicken sausage to the pot and cook until browned.
  3. Stir in the diced butternut squash and sliced mushrooms, cooking for an additional 5 minutes.
  4. Add the rinsed lentils, chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 30-35 minutes, or until the lentils and squash are tender.
  6. Once cooked, stir in the shredded cheese until melted and combined.
