Ingredients:

  • 4 chicken thighs, skinless and boneless
  • 1 large onion, thinly sliced
  • 2 cups chicken broth
  • 1 cup instant rice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they are soft and caramelized, about 8-10 minutes.
  2. Season the chicken thighs with garlic powder, dried thyme, salt, and pepper. Push the onions to the side of the skillet and add the chicken thighs. Brown the chicken on both sides, about 4-5 minutes per side.
  3. Pour the chicken broth into the skillet, covering the chicken thighs and onions. Bring to a simmer and cover. Cook for about 20 minutes, or until the chicken is cooked through and tender.
  4. Meanwhile, prepare the instant rice according to package instructions.
  5. Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes before slicing.
  6. Serve the sliced chicken thighs over a bed of instant rice, spooning the caramelized onions and broth over the top. Garnish with fresh parsley.
