Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 1 large onion, thinly sliced
  • 1 can (15 oz) red beans, drained and rinsed
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt, pepper, smoked paprika, and thyme.
  3. Add the chicken thighs skin-side down to the skillet and sear for about 5-7 minutes until golden brown. Flip and cook for another 5 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the sliced onions and cook on medium-low heat, stirring occasionally until they are caramelized, about 15 minutes.
  6. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  7. Stir in the red beans and chicken broth, bringing the mixture to a simmer.
  8. Return the chicken thighs to the skillet, cover, and cook for an additional 20 minutes until the chicken is cooked through and tender.
  9. Serve hot, garnished with fresh parsley.
