Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 cup boiled chicken, shredded
  • 1/2 cup carrots, finely diced
  • 1/2 cup green beans, finely chopped
  • 1/4 cup peas
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a mixing bowl, whisk together the flour, eggs, milk, olive oil, and salt until smooth. Let the batter rest for 30 minutes.
  2. In a separate pan, combine the boiled chicken, carrots, green beans, peas, thyme, garlic powder, salt, and pepper. Cook over medium heat for about 5-7 minutes until the vegetables are tender.
  3. Heat a non-stick skillet over medium heat and lightly grease it with oil. Pour about 1/4 cup of the crepe batter into the skillet, swirling to coat the bottom evenly. Cook for 2-3 minutes until the edges start to lift, then flip and cook for another 1-2 minutes until golden.
  4. Repeat with the remaining batter, stacking the crepes on a plate.
  5. To serve, place a generous spoonful of the chicken and vegetable mixture onto each crepe, fold, and garnish with fresh parsley.
