Ingredients:

  • 1 cup jasmine or basmati rice
  • 2 medium potatoes, diced
  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish
  • Water (for cooking rice and potatoes)

Instructions:

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, add the diced potatoes and cover them with water. Bring to a boil and cook until tender, about 10-12 minutes. Drain and set aside.
  3. In a separate pot, cook the soaked rice according to package instructions, usually about 15-20 minutes, until fluffy.
  4. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.
  5. Stir in the cooked potatoes, paprika, cumin, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld together.
  6. In another pan, fry the eggs sunny-side up or to your preference.
  7. To assemble, place a scoop of rice in a bowl, top with the potato mixture, and finish with a fried egg on top. Garnish with fresh parsley or cilantro.
  8. Serve warm and enjoy!
