Ingredients:

  • 2 packs Maggie noodles
  • 4 large eggs
  • 1 cup mixed vegetables (carrots, peas, bell peppers, chopped)
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

  1. Cook the Maggie noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
  3. Add the mixed vegetables to the skillet and stir-fry for about 3-4 minutes until they are tender.
  4. Push the vegetables to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked.
  5. Combine the scrambled eggs with the vegetables, then add the cooked noodles and soy sauce. Mix everything together until well combined.
  6. Season with salt and pepper to taste, and garnish with chopped green onions before serving.
