Ingredients:

  • 6 large eggs
  • 1 cup cooked breakfast sausage, crumbled
  • 4 strips of bacon, cooked and chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell pepper (any color)
  • 1/4 cup diced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or use silicone muffin liners.
  2. In a large mixing bowl, whisk together the eggs and milk until well combined.
  3. Add the crumbled sausage, chopped bacon, shredded cheese, diced bell pepper, diced onion, garlic powder, paprika, baking powder, salt, and pepper. Stir until evenly mixed.
  4. In a separate bowl, combine the flour and olive oil, then fold it into the egg mixture until just combined.
  5. Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes, or until the muffins are puffed and a toothpick inserted into the center comes out clean.
  7. Let the muffins cool for a few minutes before removing them from the tin. Serve warm or at room temperature.
