Ingredients:

  • 1 pound ground beef
  • 1 medium head of cauliflower, chopped into florets
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional 1 minute, being careful not to burn it.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes.
  4. Stir in the chopped cauliflower, smoked paprika, oregano, salt, and pepper. Cover the skillet and let it cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender.
  5. Remove the lid and sprinkle the shredded cheese over the top. Cover again and let it melt for about 2-3 minutes.
  6. Once the cheese is melted, remove from heat and garnish with fresh parsley before serving.
