Ingredients:

  • 1 pound ground beef
  • 1 medium head cauliflower, cut into florets
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup beef broth
  • 1 cup cherry tomatoes, halved
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Stir in smoked paprika, oregano, cumin, salt, and pepper. Mix well to coat the beef with the spices.
  5. Add cauliflower florets and beef broth to the skillet. Cover and cook for about 10 minutes, or until the cauliflower is tender.
  6. Uncover and stir in cherry tomatoes. Cook for an additional 3-5 minutes until the tomatoes soften.
  7. Remove from heat and garnish with fresh parsley before serving.
