Ingredients:

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup milk
  • 1/2 cup sour cream

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, seasoning with salt, pepper, thyme, and rosemary.
  4. In a greased 9x13 inch baking dish, layer half of the sliced potatoes at the bottom.
  5. Spread the cooked ground beef mixture evenly over the potatoes.
  6. Layer the remaining potato slices on top of the beef.
  7. In a bowl, combine the beef broth, milk, and sour cream. Pour this mixture evenly over the layered casserole.
  8. Cover the dish with aluminum foil and bake for 45 minutes.
  9. Remove the foil, sprinkle the shredded cheese on top, and bake for an additional 15 minutes or until the cheese is bubbly and golden brown.
