Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish upright.
  3. In a large skillet, heat a little oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  6. Stir in the cooked quinoa, diced tomatoes, cumin, smoked paprika, salt, and pepper. Mix well and let it simmer for 5 minutes.
  7. Spoon the beef and quinoa mixture into each bell pepper, packing it down gently.
  8. Top each stuffed pepper with shredded cheese.
  9. Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley or cilantro before serving.
