Ingredients:

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup diced tomatoes (canned or fresh)
  • 2 cups shredded cabbage
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the ground beef and season with salt, pepper, garlic powder, onion powder, and smoked paprika. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Add the diced sweet potatoes to the skillet, stirring to combine. Cover the skillet and let cook for about 10 minutes, stirring occasionally, until the sweet potatoes are tender.
  3. Stir in the diced tomatoes and shredded cabbage. Cook for an additional 5 minutes until the cabbage is wilted.
  4. Drizzle the apple cider vinegar over the mixture and stir well to combine. Adjust seasoning with salt and pepper as needed.
