Ingredients:

  • 1 lb ground elk
  • 2 medium zucchinis, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add ground elk to the skillet, breaking it up with a wooden spoon. Cook until browned, about 7-10 minutes.
