Ingredients:

  • 1 lb ground turkey
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and carrots, cooking until softened and slightly caramelized, about 5-7 minutes.
  2. Add minced garlic to the skillet and sauté for an additional minute until fragrant.
  3. Push the vegetables to the side of the skillet and add the ground turkey. Cook until browned and fully cooked through, breaking it apart with a spatula, about 7-10 minutes.
  4. Stir in the rice, chicken broth, soy sauce, salt, and pepper. Bring the mixture to a boil.
  5. Reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid.
  6. Fluff the rice with a fork, adjust seasoning if necessary, and garnish with fresh parsley before serving.
