Ingredients:

  • 1 lb ground turkey
  • 1 medium onion, diced
  • 2 cups tomato sauce
  • 1 cup rice, uncooked (white or brown)
  • 2 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the ground turkey, breaking it apart with a spoon. Cook until browned and cooked through, about 7-10 minutes.
  4. Add the tomato sauce, oregano, paprika, salt, and pepper. Stir well to combine and let simmer for about 5 minutes.
  5. In a separate pot, bring the chicken or vegetable broth to a boil. Add the rice, cover, and reduce heat to low. Cook according to package instructions until rice is tender and has absorbed the liquid.
  6. Once the rice is cooked, fluff it with a fork and serve the turkey mixture over the rice. Garnish with fresh parsley if desired.
