Ingredients:

  • 200g halloumi cheese, sliced
  • 2 large potatoes, peeled and thinly sliced
  • 1 small head of cabbage, chopped
  • 3 cloves of garlic, minced
  • 2 large eggs
  • 1 cup all-purpose flour
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for drizzling

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the sliced potatoes, chopped cabbage, minced garlic, salt, and pepper. Mix well to combine.
  3. In a separate bowl, whisk together the eggs and flour until smooth. Gradually add this mixture to the vegetables, ensuring everything is well coated.
  4. In a greased baking dish, layer half of the potato and cabbage mixture, then add half of the halloumi slices on top. Repeat with the remaining mixture and halloumi.
  5. Drizzle olive oil over the top and bake in the preheated oven for 30-35 minutes or until the vegetables are tender and the halloumi is golden.
  6. Remove from the oven and let it cool for a few minutes before serving.
