Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt
  • 1 cup shredded cheese (such as Gruyère or Swiss)
  • 1 cup diced cooked ham
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • Butter or oil for cooking

Instructions:

  1. In a mixing bowl, whisk together the flour and salt. In another bowl, beat the eggs and then add the milk and melted butter. Gradually combine the wet ingredients with the dry ingredients until smooth. Let the batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and add a little butter or oil. Pour in about 1/4 cup of the batter, swirling to coat the bottom of the pan evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute. Remove and keep warm. Repeat with the remaining batter.
  3. In a separate bowl, mix the diced ham, shredded cheese, chives, and parsley until well combined.
  4. Place a generous spoonful of the ham and cheese mixture in the center of each crepe, fold or roll them up, and place them seam-side down on a serving plate.
  5. Optional: Top with a sprinkle of additional cheese and place under the broiler for a couple of minutes until the cheese melts and bubbles.
  6. Serve warm, garnished with additional herbs if desired.
