Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 cup red wine
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides, about 5-7 minutes.
  3. Remove the beef and set aside. In the same pot, add onion and garlic, sauté until softened.
  4. Stir in tomato paste and smoked paprika, cooking for an additional 2 minutes.
  5. Return the beef to the pot and pour in the red wine, scraping any browned bits from the bottom.
  6. Add beef broth, carrots, potatoes, thyme, bay leaf, salt, and pepper. Bring to a boil.
  7. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
  8. Adjust seasoning as needed and remove the bay leaf before serving.
  9. Garnish with fresh parsley before serving.
