Ingredients:

  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup chopped green onions
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with olive oil.
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. Stir in the shredded cheese, diced bell peppers, chopped spinach, and green onions.
  4. Add the dried oregano, salt, and black pepper, mixing until evenly distributed.
  5. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
