Ingredients:

  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped fresh spinach
  • 1/4 cup diced onions
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with olive oil.
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. Stir in the shredded cheese, diced bell peppers, chopped spinach, diced onions, garlic powder, salt, black pepper, and fresh parsley.
  4. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 20-25 minutes, or until the egg muffins are set and lightly golden on top.
  6. Allow to cool for a few minutes, then carefully remove from the muffin tin and serve warm or store in the refrigerator for later.
