Ingredients:

  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheese (cheddar or feta)
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup chopped green onions
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooking spray or olive oil for greasing

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or olive oil.
  2. In a large mixing bowl, whisk together the eggs and milk until well combined.
  3. Stir in the shredded cheese, diced bell peppers, chopped spinach, green onions, oregano, salt, black pepper, and red pepper flakes (if using).
  4. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake in the preheated oven for 18-20 minutes, or until the muffins are puffed and a toothpick inserted into the center comes out clean.
