Ingredients:

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Stir in the chopped spinach, cherry tomatoes, feta cheese, basil, and parsley.
  4. In an oven-safe skillet, heat the olive oil over medium heat. Pour the egg mixture into the skillet.
