Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 clove garlic, minced
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cream cheese, mozzarella, Parmesan, parsley, basil, garlic, lemon zest, salt, and pepper. Mix until well combined.
  3. Using a sharp knife, carefully cut a pocket into each chicken breast, being sure not to cut all the way through.
  4. Stuff each chicken breast with the cheese and herb mixture, securing the openings with toothpicks if necessary.
  5. In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and juices run clear.
  7. Remove from the oven and let rest for 5 minutes before slicing and serving.
