Ingredients:

  • 10 kg ground pork
  • 30 g sage, finely chopped
  • 10 g fennel seeds, crushed
  • 20 g thyme, dried
  • 15 g marjoram, dried
  • 5 g chili flakes
  • 10 g black pepper
  • 15 g salt
  • 10 g onion powder
  • 10 g garlic powder
  • 20 g brown sugar
  • 30 g maple syrup
  • 15 g paprika
  • 10 g oregano, dried

Instructions:

  1. In a large mixing bowl, combine the ground pork with all the dry ingredients: sage, fennel seeds, thyme, marjoram, chili flakes, black pepper, salt, onion powder, garlic powder, brown sugar, paprika, and oregano.
  2. Pour the maple syrup over the mixture and mix thoroughly using your hands or a sturdy spoon until all ingredients are well incorporated.
  3. Cover the bowl with plastic wrap and let the mixture rest in the refrigerator for at least 1 hour to allow the flavors to meld.
  4. After resting, shape the sausage mixture into patties or links according to your preference.
  5. Cook the sausages in a skillet over medium heat for about 5-7 minutes per side, or until fully cooked and browned, ensuring the internal temperature reaches at least 160°F (71°C).
