Ingredients:

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/2 cup milk
  • 1/4 cup ketchup
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 egg
  • 1 cup shredded mozzarella cheese
  • 1/4 cup ketchup (for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, parmesan cheese, milk, ketchup, onion, garlic, parsley, oregano, thyme, salt, pepper, and egg. Mix until just combined.
  3. Fold in the shredded mozzarella cheese gently into the meat mixture.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
  5. Spread the additional ketchup over the top of the meatloaf.
  6. Bake for 60 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Let the meatloaf rest for 10 minutes before slicing and serving.
