Ingredients:

  • 3-4 lbs chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, cut into chunks
  • 3 stalks celery, cut into chunks
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 lemon, zested and juiced
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear it on all sides until browned, about 4-5 minutes per side.
  3. Remove the roast and set it aside. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  4. Add the beef broth, red wine (if using), lemon zest, lemon juice, rosemary, thyme, and parsley to the pot. Stir to combine.
  5. Return the chuck roast to the pot and cover it with the vegetable and broth mixture. Bring to a simmer.
  6. Cover the pot and transfer it to the preheated oven. Roast for 3-4 hours, or until the meat is tender and easily pulls apart with a fork.
  7. Once cooked, remove the roast from the oven and let it rest for 15 minutes before slicing. Serve with the vegetables and pan juices.
