Ingredients:

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 eggs
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup caramelized onions (for glaze)
  • 1 tablespoon olive oil (for cooking onions)
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and cook, stirring occasionally, until they are caramelized, about 15-20 minutes. Set aside.
  3. In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, minced garlic, eggs, Worcestershire sauce, Dijon mustard, thyme, oregano, salt, and pepper. Mix until just combined.
  4. Transfer the meat mixture to a loaf pan and shape it into a loaf.
  5. Spread half of the caramelized onions on top of the meatloaf for added flavor.
  6. Bake in the preheated oven for 60-75 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Once cooked, let the meatloaf rest for 10 minutes before slicing.
  8. Serve with the remaining caramelized onions on the side and garnish with fresh parsley.
