Ingredients:

  • 1 sheet of puff pastry (store-bought or homemade)
  • 200g goat cheese, softened
  • 4 fresh figs, sliced
  • 2 tablespoons honey
  • 2 tablespoons fresh thyme leaves, chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)
  • Optional: balsamic reduction for drizzling

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface and cut it into 3-inch squares.
  3. Place the squares on a baking sheet lined with parchment paper. Press down in the center to create a slight indentation.
  4. In a bowl, mix the softened goat cheese with fresh thyme, rosemary, honey, salt, and pepper until well combined.
  5. Spoon the goat cheese mixture into the center of each pastry square, making sure to leave space around the edges.
  6. Top each tartlet with a slice of fig.
  7. Brush the edges of the pastry with the beaten egg to give it a golden color when baked.
  8. Bake in the preheated oven for 15-20 minutes or until the pastry is puffed and golden brown.
  9. Remove from the oven and drizzle with balsamic reduction if desired. Serve warm.
