Ingredients:

  • 1 cup jasmine rice
  • 2 cups water
  • 1 cup kimchi, chopped
  • 1 can sardines in olive oil, drained
  • 2 eggs
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame seeds
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is tender and water is absorbed.
  2. While the rice is cooking, bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes for a soft-boiled egg. Remove eggs and place them in an ice bath to cool before peeling.
  3. In a skillet, heat sesame oil over medium heat. Add the chopped kimchi and sauté for 3-4 minutes until heated through and fragrant.
  4. Once the rice is done, fluff it with a fork and mix in the soy sauce, adjusting the flavor with salt and pepper as needed.
  5. To assemble the bowl, place a serving of rice in a bowl, top with sautéed kimchi, sardines, and a halved soft-boiled egg. Sprinkle with sesame seeds and sliced green onions.
  6. Serve immediately and enjoy!
